Gorduras trans: o que são e para que são usadas?

As gorduras trans são o resultado de um processo chamado hidrogenação. Este processo industrial transforma óleos vegetais líquidos em gorduras sólidas à temperatura ambiente. O valor nutricional dos óleos às vezes é alterado.

Este processo industrial é amplamente utilizado na fabricação de margarinas e gorduras emulsificantes.

As gorduras trans são muito prejudiciais à nossa saúde e muito benéficas para a indústria alimentícia, pois permitem

1 – Aumentar a vida útil dos produtos
2 – Eles não precisam de um ambiente específico para serem preservados
3 – É mais fácil de transportar e usar porque se tornou sólido após o processo de hidrogenação.

As gorduras trans, presentes nos alimentos industrializados, surgiram no início do século passado para substituir as gorduras animais, dar mais sabor, preservar por mais tempo e melhorar a aparência dos alimentos.

As gorduras trans não são sintetizadas pelo organismo e, portanto, nunca devem ser consumidas. Mas como isso é quase impossível, o Ministério da Saúde determinou que é aceitável consumir até 2g de gordura por dia, o que equivale a quatro biscoitos recheados.

Mesmo levando isto em conta, um dos grandes problemas para o consumidor é poder perceber claramente a quantidade de gordura trans contida em cada alimento.

Estudos recentes mostram que um excesso deste tipo de gordura é o mais prejudicial à saúde.

GORDURAS TRANS

As gorduras trans são prejudiciais para todos e, no caso dos esportistas, é ainda mais grave.

Além de secar e tornar os alimentos crocantes, também se acumula nas veias e artérias, impedindo que elas se dilatem durante a atividade física, quando o fluxo sanguíneo aumenta mas as veias não se dilatam para permitir a passagem do sangue.

As gorduras trans provocam o aumento do LDL (conhecido como colesterol ruim), que por si só não é grande coisa em comparação com as gorduras animais (ou saturadas), que também causam esta reação. O que faz dela a pior gordura alternativa é o fato de baixar os níveis de HDL (ou “bom” colesterol) em nosso corpo.

O LDL tem o potencial de causar a formação de placas de gordura nos vasos sanguíneos, causando possíveis bloqueios, e pode levar, por exemplo, a um ataque cardíaco ou derrame.

O HDL, por outro lado, está relacionado à redução de ateromas (aquelas placas que se formam nas paredes dos vasos). Além disso, as gorduras trans não são sintetizadas pelo corpo e, portanto, permanecem no corpo produzindo gordura visceral, que se acumula principalmente ao redor da cintura e do abdômen.

Nos últimos anos, muitos ataques cardíacos ocorreram entre jovens atletas com saúde invejável, e muitos cientistas relacionaram estas situações ao consumo desta gordura.

Verifique os ingredientes do produto. Se diz gordura vegetal hidrogenada, você sabe que o alimento contém gordura trans em uma quantidade igual ou inferior a 0,2 g por porção.

Os alimentos que contêm mais gordura trans são biscoitos, sorvetes, pipoca de microondas, salgadinhos, bolos, tortas, pastéis, qualquer alimento frito feito com óleo contendo gordura trans e qualquer coisa com margarina dentro.
